[Recipe] Homemade Quinoa Granola

I used to eat store-bought granola back in college, but I could never finish the whole container and always felt guilty of throwing away once I got tired of the same, sweet and bland taste.


A few years ago, I've watched my favorite model/influencer make her own granola at home, and that inspired me to do the same - make granola from scratch.


I love knowing what is in my food, and making things from scratch can prevent you from consuming/over-consuming things unknowingly.


Since then, I've tried a couple of different granola recipes and came up with the ingredients/portion that works for me.


This recipe in particular gives an extra crunch from quinoa, while having less "nuttiness."

I didn't use some of the common nuts found in granola (simply because I didn't have them in stock lol), but you can add any nuts/seeds of your choice.


The recipe below is just a suggestion, so tweak it however you like!


Ingredients:

  • Oatmeal: 1 cup

  • Almonds: 1/2 cup

  • Walnuts: 1/4 cup

  • Pecans: 1/4 cup

  • Quinoa: 1/4 cup

  • Coconut oil: 1/8 cup

  • Honey: 1/4 cup

  • Salt: a pinch

Instructions:

  1. Preheat the oven to 350°F

  2. Coarsely chop almonds, walnuts, and pecans

  3. Line a baking pan with a silicone mat or parchment paper

  4. Add all ingredients to the pan and mix with hands so that coconut oil and honey can coat the dry ingredients

  5. Spread the mix evenly on the pan and make it flat

  6. Put it in the oven for 20 minutes, stirring it half way

  7. Check to see if oatmeal/nuts started to brown a little - if not, bake for another 5 - 10 minutes

  8. Take out from the oven and let it cool completely

  9. Store it in a mason jar or any airtight containers and enjoy!


Other ingredients that will go well with this recipe are:

  • Cashews

  • Hazelnuts

  • Pumpkin seeds

  • Chia seeds

  • Hemp seeds

  • Flax seeds

You can substitute honey with agave if you want to make it vegan :)
