Here's the recipe for the blueberry muffins I introduced in my video on YouTube!
You can freeze it too so great for meal/snack prepping.
Ingredients(yields 9 muffins):
All purpose flour:1/2 cup
Oat flour:1/2 cup
Brown sugar:1/3 cup (add more for more sweetness)
Salt:a pinch
Baking powder:2 tsp
Coconut oil:1/3 cup
Egg:1
Milk of your choice:1/3 – 1/2 cup
Vanilla extract:1 tsp
Lemon juice:1 – 2 tsp
Blueberries:1 cup
Steps:
Preheat the oven to 400°F
In a large bow, combine all purpose flour, oat flour, brown sugar, salt, and baking powder
In a separate bowl, combine egg, coconut oil, milk, vanilla extract, and lemon juice
Slowly pour (3) to (2) and mix lightly
Once everything is well combined, add blueberries and fold them in
Pour the mixture to the muffin tin
Bake for 15 to 20 minutes, checking halfway
Transfer to a cooling rack and store once completely cooled
